Such as marshmallows, this chewy sweet is far more than it appears: it may offer unexpected digestive health benefits.

    Homemade Marshmallows Recipe

    We've provided you with a traditional recipe on how to make marshmallow from the root of the marshmallow plant. This cooking method is more delicate, but promises an authentic experience!

    Ingredients:

    • 1/4 cup dried marshmallow root, cut into small pieces
    • 2 cups cold water
    • 2 tablespoons powdered gelatin
    • 2 cups granulated sugar
    • 1/2 cup water
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract (optional)
    • Coating: icing sugar and cornstarch mixed together (about 1/2 cup each)

     

    Instructions:

    1. In a saucepan, combine the marshmallow root and the 2 cups of cold water. Leave to infuse for at least 4 hours, or ideally overnight.
    2. Once the infusion is complete, strain the liquid to remove the pieces of marshmallow root. You can use a fine sieve or strainer.
    3. Pour 1/2 cup of the infusion liquid into a small bowl and sprinkle the gelatine over the top. Leave the gelatine to dissolve in the liquid for a few minutes.
    4. While the gelatine is dissolving, combine the granulated sugar, remaining infusion liquid, water and salt in a saucepan. Heat the mixture over medium-high heat, stirring constantly, until it reaches a temperature of 115°C (240°F) on a candy thermometer.
    5. Remove the sugar mixture from the heat as soon as it reaches the desired temperature.
    6. Slowly add the dissolved gelatine mixture to the marshmallow liquid, whisking constantly.
    7. Increase the speed of your mixer to maximum and continue beating for about 10-15 minutes, or until the mixture becomes thick, glossy and increases in volume.
    8. Add the vanilla extract if you wish and mix briefly.
    9. Pour the marshmallow mixture into a tin lined with baking parchment and sprinkled with the icing sugar and cornstarch mixture.
    10. Leave the marshmallow to set for at least 4 hours, preferably overnight.
    11. Once the marshmallow has hardened, turn it out onto a surface sprinkled with more icing sugar and cornstarch. Cut into squares or shapes of your choice.
    12. Roll each piece of marshmallow in the icing sugar-cornstarch mixture to coat well.

    Now your homemade marshmallow paste, prepared from marshmallow root, is ready to be enjoyed! You can preserve them in an airtight container to keep them fresh.
